I say that this is a special recipe because it truely is!
This has to be one of my favourite things about going to Sharing Bali to run my Kari On Training Bali Fitness Retreat. All of the food is exceptional but this one for me stands out as one of the highlights! I love knowing that this Banana Pancake is ready for me after we finish our morning work out.

Now for the recipe:
- 1 banana
- 1 egg
- Juice of ½ lemon
- 2 spoons rice flour
- ¼ cup milk or water
- pinch cinnamon
- lime, grated coconut and palm sugar for garnish
- butter for cooking
Combine egg, lemon juice, cinnamon, and salt in a dish. Mix with a fork. Gradually add milk/water until you have a smooth mix. Fold in flour. Add milk/water if necessary for a thin mix. Cut banana in half lengthwise. Simmer in hot water until soft. Drain. Melt a dab of butter in shallow frypan. Pour in a thin layer of mix. Cook until golden brown.
Place banana in centre of pancake, wrap edges over. Cook for a minute or so. Sprinkle grated coconut & palm sugar on top.
Serve with a lime
